Doctored Up!

Super easy, super good, doctored up meat & veggies! All you need is 4 ingredients, 15 minutes and a few hungry bellies.

  1. 2 lbs. Grass-Fed Ground Beef
  2. 16 oz. Trader Joe’s Frozen Spinach
  3. 1 Jar Trader Joe’s Organic Marinara Sauce
  4. 1 lb. Organic Brussel’s Sprouts

In cast iron skillet add beef and frozen spinach. On medium-high heat cook until beef is no longer pink. Drain. Add jar of sauce and turn heat to med-low to simmer. Cut stems off Brussel’s sprouts and steam until tender. In my pressure cooker this took 4 minutes.

Veggie Superstars

Brussels Sprouts are a member of the cruciferous family along with broccoli, cauliflower, cabbage, kale, turnips, & collards. These veggies are known as the potent cancer fighters.

Spinach is one of the best sources of Vitamin K, is rich in Calcium, Vitamin A, folic acid, iron, Vitamin C, manganese, magnesium, lutein and has compounds that are both anti-inflammatory and anti-cancer.

Onions and Garlic belong to the allium family. Both have been shown to lower high blood pressure and reduce LDL cholesterol levels. These veggie superstars, like the others are powerful anti-inflammatories as well as cancer fighters.

Tomatoes are known for their lycopene; another powerful cancer fighter. Besides lycopene, tomatoes are rich in phytochemicals that combat disease.

  1. I am trying to make a list of meals for a large once a month shopping list to control our budget as far as items that can be divided up and frozen so that in turn, I make less shopping trips. I love how you make these simple but healthy and easy going meals. I am thinking that I need to incorporate a few “ground beef and what ever we have on hand as far as veggies” to my menu planning. Thanks for showing us that not every meal needs to be an elaborate “recipe” to be satisfying.
