Tried making the blueberry muffins with coconut flour.
Don’t think they had enough moisture in them
Adding more coconut milk but still seemed dry.
Any suggestions.

Hi Annette, what recipe did you follow? In my coconut flour muffins the batter is a different consistency than the almond flour muffins however they do not turn out dry at all.
I used the one called blueberry muffin recipe.
I must of did something wrong or missed something as they were a total flop.
Really dry and would not bind together.
Will try again today. Substituting the coconut flour for the almond again.
As don’t have any of the almond flour but maybe will get a chance to go out and get some.

But on a good note the Revolution rolls turned out the best yet by making the 3 egg receioe only. I use double it but think doing the smaller one is better for my oven. Oven really not big enough for 2 pans at once.

Did you just replace the almond flour with the coconut flour? They cannot be swapped one-for-one. Try this recipe instead: http://healthylivinghowto.com/1/post/2012/01/muffins-by-request.html
Made them again tonight as we went shopping and brought the almond flour.
Turned out great and will be making more of these.

Yes I had just swapped the flours but had added more liquid but apparently it wasn’t enough.

Yes, you cannot substitute 1:1 coconut flour with other flours. As you have learned it is quite “thirsty”. About a 1/4 c. of coconut flour is the equivalent of 1 c. of other flours.
