I've got a confession to make, most of the meals we eat are actually quite basic and dare I say boring. Breakfast, lunch and dinner is almost always some combination of protein, healthy fats and veggies. While I have lots of tips and tricks to make meals visually appealing and taste wonderful, they aren't necessarily a “recipe” per se.
Oftentimes as we sit down to one of these very simple dinners, Tom will ask if I took pictures for my blog. The answer is always the same, “no.” He thinks I should share every culinary creation and I assume everyone knows how to oven roast Brussels sprouts. With a little prompting and a reminder that not everyone knows how to “throw” a healthy meal together, I agreed to start sharing more of our basic, simple ingredient meals with you. Starting with this very easy bacon wrapped chicken breast with healthy mayonnaise.
Bacon Wrapped Chicken Breast
Ridiculously easy, two ingredients required, chicken breasts and bacon. The healthy mayo is optional, but adds a layer of flavor to this simple meal.
Step One
Preheat oven to 425°F .
Quick Clean-Up Tip
Line a sheet pan with aluminum foil and then place a metal baking rack on top.
Step Two
Slice chicken breast, not too thin, not too long. Wrap a piece of bacon around each piece and place on rack. The great thing about this easy peasy recipe is you can make as much or as little as your heart desires.
Step Three
Bake for 20 minutes and then turn over and bake 10 more or until bacon is lightly browned.
That's It!
Prepare a veggie for the side, kale chips anyone, and if you want to kick it up a notch make your own healthy mayo for dipping. These are excellent hot or cold and make great leftovers!
