Went for a lovely walk during yesterday's weather delay and helped my sister with my nephew's birthday party. Thirteen 5-6 year old boys dressed like cowboys (it was a theme party) with squirt guns. You can imagine. I left before the ponies showed up. Anywho. Onto yesterday's lunch.
- Chicken Breast
- Uncured Bacon
- Goat Cheese Crumbles
- Marinara Sauce
- Organic Zucchini
You can scale this up or down for one or many. Depending on the size of the zucchini, it is 1-2 per person.
In cast iron skillet fry up your bacon. You want to do this first because the bacon fat left behind is what you are going to use to cook the zoodles and chicken breast. While snacking on a piece of bacon, throw zoodles in the pan and saute until tender. Take the zoodles out and throw in the diced chicken. Once chicken is done, throw bacon and zoodles in the pan and hit it with your sauce. However much you like. Plate it and top with goat cheese crumbles.
