What comes to mind when you think of foods that just belong together?
- Wine & Cheese.
- Coffee & Cream.
- Steak & Eggs.
- Liver & Onions.
- Bacon & Chocolate………say what?
Yes, bacon & chocolate. Inspired by Vosges Chocolate Bacon Bar, may I present to you my version of Chocolate Covered Bacon. A sweet & salty low-carb combination that oddly makes sense. Enjoy!
Chocolate Covered Bacon
Ingredients
- 10 Strips of Bacon
- 85% Lindt Dark Chocolate Bar
- 1 Tbsp. Coconut Oil
- Chopped Nuts
- Granular Erythritol or Xylitol
Directions
Weave each slice of bacon on a skewer. Place a baking rack in jelly roll pan and line up skewers on rack. Bake at 400 degrees F for 20 minutes or until done. Break up chocolate into small pieces and place in a microwave safe bowl. Melt for about a minute and whisk in coconut oil. With a basting brush, baste each skewer of cooked bacon, on both sides and place on a large sheet of parchment paper. Sprinkle erythritol/xylitol or chopped nuts. Refrigerate overnight.
