Consider yourself warned. These little gems are highly addicting and they taste exactly like, what I remember, the Girls Scouts' Thin Mints tasting like. When I was growing up, my Dad kept the Thin Mints in the freezer, and you would eat them frozen. My version are similar, in that, you eat them right out of the freezer. However, these are not cookies, but two layers of buttery dark chocolate with a minty layer sandwiched in between. I suppose you could let them sit on the counter for 5 minutes to soften them up a little, but don't let them sit out too long or they will melt.
The two dozen I made on Sunday morning have already disappeared, with the help of my handsome husband, my dad and my son. And to quote my 16 year old, “yep, these taste just like Thin Mints!” My version of healthy Dark Chocolate Thin Mints are rich and nutrient dense, as well as low-carb, dairy-free and sugar-free. Not only is cacao a beneficial superfood that contains a wide spectrum of minerals and phytonutrients, I used two of the world's healthiest fats, coconut oil and ghee. Ghee is rich in butyric acid which suppresses inflammation in the gut and coconut oil is famous for it's anti-viral, anti-bacterial, anti-fungal, antioxidant and immune-stimulating properties. You can most definitely enjoy this treat without any guilt and actually improve your health while indulging.
Freezer Time: 1 hour

Ingredients
♥ Step 1
- 3 Tbsp. Homemade Ghee or Purity Farms Organic Ghee
- 3 Tbsp. Nutiva Coconut Oil, Extra Virgin, Organic
- 6 Tbsp. Hershey’s Special Dark 100% Cacao Powder
- 30 drops NuNaturals Pure Liquid Vanilla Stevia
- Pinch Celtic Sea Salt
♥ Step 2
- 8 oz. Let's Do Organic Finely Shredded Unsweetened Coconut Flakes
- 1 Tbsp. Nutiva Coconut Oil, Extra Virgin, Organic
- 1/2 tsp. (112 drops) NuNaturals Alcohol-Free Liquid Peppermint Stevia
♥ Step 3
- 3 Tbsp. Homemade Ghee or Purity Farms Organic Ghee
- 3 Tbsp. Nutiva Coconut Oil, Extra Virgin, Organic
- 6 Tbsp. Hershey’s Special Dark 100% Cacao Powder
- 30 drops NuNaturals Pure Liquid Vanilla Stevia
- Pinch Celtic Sea Salt
Directions
- In small glass dish, melt ghee and coconut oil together in microwave for 30 seconds.
- To this add cacao powder and mix until all lumps removed.
- Add stevia and salt and mix again.
- Line 24 count mini-muffin pan with paper liners and to each add 1 tsp. of chocolate.
- Place in freezer.
- In high-powered blender or food processor add coconut and process on high until it starts to reduce.
- Add melted coconut oil and stevia and process again until smooth.
- Get chocolate out of freezer, add 1 tsp. of coconut mixture to each cup and return to freezer.
- Repeat steps 1-5.
- Once mints are frozen, transfer and store in sealed container.
