If the last post didn't move you to make cupcakes, maybe this one will. I mentioned the frosting I made flopped and that we were eating our cupcakes with whipped cream……well I got the idea to make kind of a strawberry shortcake creation. And let me tell you, it was delicious. The next batch of cupcakes, I am using banana extract for a banana split effect.

Buy Organic Strawberries
First of all, it is important to buy organic strawberries. The reason isn't because the nutritional value is greater but because of the pesticides. Pesticides have been linked to a variety of health problems, including brain & nervous system toxicity, cancer, hormone disruption, and more. The Environmental Working Group publishes a list of what's called the “Dirty Dozen”, the top 12 produce that have the highest concentration of pesticides (that's after being washed). Strawberries are #3 on the list, apples are #1 and celery is #2. You can read more HERE. In addition, the state that provides 90% of commercially raised strawberries has approved a fumigant pesticide that is a known carcinogen.

Make the cream by mixing it with 10-12 drops liquid stevia and then whipping. Two ways to do this, you can either use a cream whipper or use electric beaters.
Split the cupcake in half, add a layer of strawberries, cream and cacao nibs, top and add more cream & nibs.
