Could also be titled, Blueberries are Back! Only this time not in pancake form but in a lovely, yummy salad. Traditional poppyseed dressing is mayo, vinegar, sugar & poppyseeds. Well wouldn't you know I've got A LOT of homemade mayo just waiting to dress a salad and we can do away with the sugar easily enough.
As you can see, the salad, other than looking beautiful, is nothing fancy. The blueberries can be replaced with strawberries, or even forgo the fruit and do colorful bell peppers. I love sunflower seeds on my salads and for protein I added some full-fat cottage cheese (we love the Kalona Super Natural Grass-Fed dairy products).The ratio of mayo to vinegar is personal taste in a salad dressing, personally I prefer 1:1. This bowl of greens is huge, I mean huge, this is a serving bowl. I eat it all! The thinner the dressing the further it goes, which is one of the reasons why I like a 1:1 mayo/vinegar ratio.
Ingredients
- 2 Tbsp. Homemade Mayo
- 2 Tbsp. Coconut Vinegar or White Vinegar
- 1/2 tsp. Poppyseeds
- 5 Drops NuNaturals Pure Liquid Clear Stevia

Simple, really, just mix it up and drizzle over salad!
