I've held off long enough — it is after all the last week in September — time to start baking with pumpkin. Today's very simple recipe is a dense and moist pumpkin bar. It is so good, no cream cheese frosting is necessary. These are best completely cool and even chilled a bit in the refrigerator. Since moving downtown a month ago, we've been looking forward to today — the first home game for our Minnesota Vikings. I recently spotted these adorable pears at our local natural foods co-op and knew I had to snatch up a few. They were labeled organic Conference Pears. At less than 2 oz. a pear, they are the size of a large strawberry. I tried doing some research on this variety, but came up with very limited information, and am beginning to think these were mislabeled. At the beginning of the summer my husband made a career move. This has been the biggest blessing for our family and a major change in our lifestyle. Barbecue ribs are quite possibly my son B's favorite food. It is super easy to make the sauce and even easier to make the ribs using the low and slow oven method. We hit the foodie jackpot this weekend, as our Whole Foods had a sale on 100% grass-fed ground beef, organic strawberries, and wild caught lobster tails. I have to admit, this was the first time we've ever bought and made lobster tails. At half-price, they were worth the splurge. Pulled pork is a weekly staple in our house. It is both easy and quick to make using a pressure cooker and turns out delicious and moist every time. Tom and I have wanted to try stand up paddle boarding for some time. Living in Minnesota, the Land of 10,000 Lakes, the summer months are the time to splash in the water.
